The award-winning restaurant Kebab Khan, under the aegis of Alchemist Foods Ltd, launches an all new menu that will win over critics and clients alike. In its never-ending quest to offer the best from the Mughlai and the cuisine of the Khyber region, the new menu offers a “delicious departure” from the ordinary.
The new menu yet again explores the culinary synergy between the rich royal heritage of India and Pakistan. Under the guidance of celebrity chef from Pakistan, Chef Poppy Agha, Kebab Khan will take its patrons on a masala sojourn, where the flavors would be as varied as India’s climate and Pakistan’s culinary legacy. The passionate team of chefs mentored by Chef Poppy has constructed new dishes on the menu with a nuanced masala combination, thereby blending the two cuisines.
Kebab Khan wins awards and accolades for its traditional cuisine. Consultant Chef Poppy Agha has kept that tradition intact; she has worked with old favourites, and given them a more classic touch. She has refreshed the menu by bringing in new recipes from her grandmother’s kitchen and the streets of the Khyber region, and reworked existing dishes to bring forward more subtle yet rich flavours. An example is the new Tawa Murgh with highlights of Coriander seed. This dish was inspired by the Tawa Chargha made in Peshawar, and merged with the flavours of Tawa Murgh made in Delhi. The product is a succulent chicken dish using Garam Masalas in the base, and given life by the aroma of Coriander. Likewise, the Bhuna Gosht that is now on the menu moves away from the traditional Khadda Masala (whole spice) and is a lot livelier with a heady sauce. Gosht Seekh Kebab with its succulent minced mutton prepared with traditional spices spreads an earthy aroma while the Chapli Kebab, a master delicacy of the Pashtuns is given a new twist when prepared with a dash of Sesame by Chef Poppy. The Gol Boti Angara, a Kebab Khan specialty with its flavourful gravy is beautifully paired with the Khasta Parathas. The dessert menu reads like poetry with the addition of a new signature dessert, the refreshing Gulkand Ice Cream that tastes like rose petals on your palate, as well as clients’ favourites, the rich creamy North Indian Shahi Tukda.
