Botanica is the latest addition to the dining concepts of One&Only Reethi Rah. Set around an ancient Banyan tree decorated with twinkling lanterns and wild orchids in the chef’s own potager, Botanica offers a unique opportunity to indulge in delicious organic food and wine in a magical al fresco setting. Dine among brilliantly coloured orchids in the Orchid House, under thatch at the Chef’s Table carved from a whole white lead tree, or in oases of sweet-smelling herbs washed by soft, live acoustic music. Whatever guests choose they are guaranteed the ultimate in field-to-fork cuisine.

Watch how 18 types of organic vegetables and 14 varieties of herbs are picked fresh from the beds that surround your table and combined with locally sourced fish, seafood and organic meats from artisanal suppliers. Savour the difference as your hand selected ingredients are air-dried, smoked, steamed or slow-grilled over charcoal in a rare cooking method known as Robatayaki to retain their health-giving properties and to enhance their natural scents and flavours.

The food at Botanica is prepared using 100% organic and sustainable produce from the vicinity of our garden or artisanal producers within Maldives and around the world. The menu is created using freshest, hand-picked, organic, local and imported ingredients.

Dinner at begins with an exceptional amuse-bouche that is served with Bottega organic olive oil. Cold and hot appetisers, soups, followed by your choice of main course – line-caught fish from the open sea, steroid- free and antibiotic-free meat, or caviar will be served. We use Rougié foie gras, a brand that ensures the farming process of ducks are closely supervised step by step, for the stress level is monitored to minimize the suffering of the animal.

The experience at Botanica is then ended by organic desserts created by our Executive Pastry Chef.

Not only the food at Botanica is organic, but we also serve organic beverages and wines. Organic wines from the New and Old World countries, innovative organic cocktails such as Basil Smash, Herb Garden are the signature cocktails. All beers are also organic from the United Kingdom and Australia.

For non-alcoholic beverages, Luscombe, an organic soft drink, made with 100% natural ingredients and without any colourant or additive. At Botanica, guests won’t be able to find any traditional carbonated soft drinks such as Sprite, Coca-Cola, etc. Water is extracted from the sea, distilled, filtered and bottled in-house. Coffee comes from Australia, the Jasper organic Australian coffee, the brand that focuses on fair trade, low foot print, sustainability of the environment.
